Well, yes, it's the fourth generation of coffee roaster!! It all started with my great grandfather more than 80 years ago in france.. then my
grandfather, and my father.. We all started pretty young to roast coffee in the familly shop.. I learned with my father how to roast the same way than my grandfather did.. I was using a french
roaster, SAMIAC, 60 kg, that got converted in a 30 kg later on... i have to say it's only when i started travelling a bit, that i really got into coffee!! As i was roasting in the way my
familly did for many years, and for french people ( who are very old fashion and who dont really wanna loose the traditions, basicly, they dont wanna try anything different!! that s how i see
french people!! ), changes are looked in a suspicious way!!! So, as i said, after visiting a few european cities, it' s in australia, about 10 years ago now, that i met some really passionated
people, from an old coffee growers familly in New Guinea. I worked with them for a little while, and we worked together, sharing our passion of coffee.. I wasn t very familiar at all with how to
use an espresso machine to create wat is now recognized as the Latte Art!!! Since then, i ve been working with a few different people, learning different styles of how to make (or try to) the
perfect cup of coffee!!
These days, in australia, coffee as become more and more popular, it s become so trendy, every town, cities, airport etc.... has got an espresso machine, and a barista. As i have to say, i ve
met a lot of them, and i ve seen some really talented people, but i have also met some people who have been making coffee for years and years, the old fashion way,and, have no idea how to even
change the coffee grind, or how to froth milk without having bubbles 5 inches high to make a beautiful looking cappucino!!!!!! I have to say i am amazed to see the interest, (apart from the
money side of it of course for the roasters and café owners) and the real passion that all those people have developped for coffee!!! I am very pleased to see a nation of curious,
passionated, enthusiatic, coffee drinkers, and coffee makers as well!!!
Coffee is like wine to me. Coffee and wine both need the passion of human beings.. They both require extreme attention, passion, professionalism, love, and most of all, a genuine artistic vision of
taste! Tasting, looking, talking, thinking... Making a great cup of coffee is a genuine art, and i dont say "the perfect cup of coffee", as i do think there is no perfect cup of
coffee, ( as taste is something entirely subjective) .. like a painting, every coffee is unique! of course, when u make hundreds of coffee a day in a café, consistency is required, but
like a bottle of wine, from the same year, same barrel.etc... every bottle, as good as it can be, is a unique piece!!! The difference with coffee,is that the "barista", takes a major
role!!! You need to have the passion, the skills, the concistency, and also being an artist!!! I am not talking about the pretty pattern on a latte, i am talking about brewing the best
espresso!!!!! finding the perfect grind, tamping it with the right pressure, looking at it pouring down gently, getting thicker, giving slowly a golden crema, and knowing excatly when to stop
it from pouring before giving it any bitterness....
I could keep talking about coffee and how to brew a great cup of coffee!!! but the best is to taste it, with somebody passionated as well, and to share your feelings, your ideas, your critics, your
expectations, etc....
